Ingredients For fried mashed potato balls

2 ccold mashed potatoes

1egg, lightly beaten

3/4 cshredded cheddar cheese

1/2 cchopped green onion
-
1/4 ccrumbled bacon
-
1/2 cdry bread crumbs

oil for frying
How To Make fried mashed potato balls

1Place the mashed potatoes in a bowl; bring to room temp. for about 30 minutes. Stir in the egg, cheese, onion and bacon bits. Shape into 1 in. balls; roll in bread crumbs. Let stand for 15 minutes.

2In an electric skillet , heat 1 in. of oil to 375. Fry potato balls a few at a time, for 2 1/2-3 minutes or until golden brown. Remove with a slotted spoon to paper towels to drain. Serve warm.
