I have a fresh herb garden and always love to infuse the fresh flavors of my herbs into my cooking. This is an easy way to get the flavor into a great potato side dish.

Ingredients For fresh herbed roasted potatoes

  • 3 lg
    russet potatoes peeled and sliced
  • 4 stalk
    fresh chives
  • 4 clove
    garlic minced
  • 3 sprig
    fresh thyme
  • 3 sprig
    fresh rosemary
  • 3 Tbsp
    olive oil
  • kosher salt

How To Make fresh herbed roasted potatoes

  • 1
    Line a baking sheet with parchment paper. Place the rounds of potatoes in a single layer. Throw the garlic and fresh herbs over the top of the potatoes.

    Drizzle with olive oil and sprinkle with salt. Bake in preheated oven at 350 degrees for 10 minutes then flip the potatoes and bake 10 more minutes.

    Remove and discard the herbs and serve.
