I like cauliflower, but I don't like serving an all white meal. I use this as a starch and then make a green veggie besides. It tastes great and I get an extra serving of vegetables - and even the kids like it.

Ingredients For fauxtatoes

  • 1
    head caluiflower
  • 1 lg
    potato, peeled
  • 2 clove
    garlic, peeled
  • 1/2 c
    milk
  • 1/4 c
    parmesan cheese, grated

How To Make fauxtatoes

    Cut cauliflower into uniform florettes. Cut potato into similar size pieces. (the smaller the pieces the less cooking time is needed) Put vegetables in a large pot and bring to a boil (about 20 min.) until fork tender, but not mushy.

    Drain vegetables in a colander, shaking off as much water a possible. Transfer into a mixer or food processor. Add remaining ingredients and process until desired consistency is achieved.
