This is one of my favorite potato side dishes.

Delicious, cheesy potatoes that could be served alongside grilled steak or a holiday meal. With their creamy texture, red potatoes are the perfect choice for this side dish. Layered in between slices of potatoes is a creamy and cheesy filling with bits of green onions and smoky bacon for flavor. It's a simple side dish to put together and most of the prep work can be done the night before.

Ingredients For elegant potatoes

2 lbunpeeled red potatoes

1 csliced green onions
-
1/3 cbutter
-
2 csour cream
-
6 slicecrisp-fried bacon, crumbled

2 cshredded sharp cheese

salt and pepper, to taste
How To Make elegant potatoes

1Cook the potatoes in enough water to cover in a saucepan just until tender; drain.

2Let stand until cool.

3Slice the potatoes.

4Saute the green onions in the butter in a skillet just until tender-crisp.

5Layer the potatoes 1/2 at a time in a 3-quart baking dish sprayed with nonstick cooking spray.

6Sprinkle half the green onions and bacon.

7Add half the sour cream.

8Add half the cheddar cheese, salt, and pepper.

9Repeat layers.

10Bake at 350 for 20 minutes.
