This was one of my dad's favorite things to make for supper for him and us kids. Of course his favorite condiment on this was always ketchup. Sooooo good.

Ingredients For eggs with fried potatoes

  • 6 md
    russet potatoes
  • 1 md
    yellow onions
  • 1/4 c
    vegetable oil
  • 1/4 c
    finely diced celery
  • 1/4 c
    diced green onions
  • 1 clove
    garlic
  • 6 lg
    eggs
  • salt and pepper to taste

How To Make eggs with fried potatoes

  • 1
    Peel and small dice potatoes. Put oil in non-stick skillet. Add potatoes, onions, celery, and garlic. Cook until tender and brown. Stir potatoes often. Remove excess oil from pan. Mix eggs all together in a bowl then add to potatoes and cook till eggs are done. Great served with homemade biscuits. NOTE: Remove excess oil before adding the eggs.
