Ingredients For eggplant and potatoes

  • 3 md
    potatoes, peeled and thinly diced
  • 1 md
    eggplant, peeled, halved, and thinly sliced
  • 3 Tbsp
    tomato paste
  • 2/3 c
    sour cream
  • 4 Tbsp
    butter
  • salt and pepper to taste
  • 1/2 small green bell pepper, seeded and chopped (optional)

How To Make eggplant and potatoes

    In a large bowl, combine all ingredients. Turn into a buttered 2-qt. baking dish.

    Bake in a preheated 350-degree oven for 35-45 minutes until all vegetables are very tender. Taste for seasoning and add salt and pepper as needed.
