I am always looking for quick and easy dinner ideas to feed my busy family. When I stumbled upon this one, I tried it and my family instantly fell in love with these. I add about a 1/4 to 1/2 cup of real bacon bits to the batter... MMM MMM GOOD!!

Ingredients For easy cheddar potato cakes

2 cinstant potato flakes,

1 ccheddar cheese, shredded

2 Tbspflour

1/4 ccornmeal
-
1 tspseasoning salt

1 tspgarlic powder

1/4 conions

1/2 tspblack pepper

2 cmilk

1 lgegg

1/4 cbutter, melted

vegetable oil (for fying)
How To Make easy cheddar potato cakes

1In a bowl combine dry ingredients and onion. In another bowl mix milk, egg, and melted butter. Whisk until well combined; add to the dry mixture; mix well. Let the mixture sit for 10-12 minutes until liquid is absorbed. Heat oil in skillet over medium heat. Using slightly wet hands, tightly shape into small balls (About 2 TBLS) place into hot oil then press down lightly with back of a spoon. Cook about 3 minutes on each side or until browned. Remove to paper towels to drain. Add more oil as needed.
