If you have kids that don't like veggies, try this one at Easter dinner. The Easter Bunny sells carrots that are yellow & orange at Trader Joes-or just use regular orange ones. This makes a very pretty and colorful side dish for Easter or any dinner.

These potatoes are nice and creamy with a pop of sweetness from the carrots. We love the added color the carrots give this dish too. This would make a great side dish with any Easter dinner.

Ingredients For easter bunny mashed potatoes

  • 5-7 lg
    potatoes - peeled & cut into chunks
  • 1/2 pkg
    TraderJoes frozen carrots rustica (chopped up yellow & orange carrots
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4-1/3 c
    sour cream
  • 3-4 Tbsp
    butter or margarine

Our Trader Joes stopped carrying the suggested carrots so we substituted some of their fresh yellow and orange carrots. It turned out great!

    Put chopped potatoes & carrots in med/lg saucepan. Cover with warm or hot water and add a pinch of salt.

    Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.

    Drain and return to pan. Add sour cream, butter, salt & pepper. Mash with a masher or electric mixer until there are only small pieces of carrots in smooth potatoes.

    Serve to family & a bunny if you have one! If not, invite a bunny to dinner!
