This is a trick I use when I am in a hurry!!! I get two styles of potatoes with just the amount of work of doing one style! This is a win win win time saver! I peel the potatoes by cutting the skin off kind of thick... I have two pans of water... one for the cut up potatoes and one for the skins. I store the skins in containers in the refrigerator for a couple of days until I am ready for them to be made into fries. I cook the cut up potatoes in soups, stews or as mashed...

Ingredients For double potatoes ! or 2 birds with one stone!

  • 5 - 10 lb
    potatoes of choice (scrubbed well)

How To Make double potatoes ! or 2 birds with one stone!

  • Thick cut potato peelings

    Instead of using a potato peeler, use a sharp paring knife, cut the peelings off of the potatoes about 1/4 of an inch thick.

    Place the potato peelings in cold water. Rinse potatoes, place in storage containers of choice and cover with water before storing in the refrigerator.
  • Peeled, cut potoatoes.

    Cut up the rest of the potatoe into desired size chunks. Place in a pan of water. Bring to a boil and cook until tender. Or... add to soups or stews.

    In a couple of days, drain the potato skins. Heat oil for frying. Place some of the potato skins in the hot oil and fry until golden and fully cooked like french fries. Serve these rustic fries as part of a meal or as a snack just as you would other fries! *** You will be able to create two wonderful potato dishes with less work! Enjoy!
