One of my dance club friends who is a very good cook, gave this recipe to me. Everytime I prepare this dish, I think of her and how beautifully she and her husband dance our favorite specialty dance called the 'Night Club Two Step'.

Ingredients For debbie's potato casserole

  • 1 lb
    package frozen diced hashbrowns (16 oz.)
  • 1
    small onion, chopped
  • 1 can
    cream of mushroom soup
  • 1/2 can
    water
  • 8 oz
    cream cheese, softened
  • 1/4 lb
    butter (1 cube)
  • 1/2
    boneless chicken breast, cooked and diced
  • ---
    salt and pepper to taste
  • ---
    grated cheddar cheese

How To Make debbie's potato casserole

    Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.

    Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.
