dar's diced bacon and potatoes

My friend Darlene brought these to a cookout we had at our house, and they were just delicious. Frankly, I use the bacon in those little bags rather than cook my own, and put this together much faster that way!

Ingredients For dar's diced bacon and potatoes

  • 1 lb
    bacon, cooked and crumbled (i use the bag of bacon instead)
  • 1
    onion, diced fine
  • olive oil
  • potato, peeled and chopped
  • salt and pepper
  • basil
  • oregano
  • minced garlic
  • parsley

How To Make dar's diced bacon and potatoes

    Cook and crumble bacon. Dice onion into small pieces. Put olive oil in the bottom of a covered casserole dish then combine extremely small pieces of potatoes with the remaining ingredients to taste. Bake at 350 degrees until potatoes are tender. Check every 20-30 min, and more frequently when almost done.
