Ingredients For crispy roasted potatoes

4 mdpotatoes, unpeeled, chop 1 1/2 " pieces

1/8 tspsea salt + 1/2 tsp

1 - 2 clovegarlic, fresh, minced

2 Tbspfresh parsley, chopped

1small, fresh, thyme sprig, remove leaves

1 Tbsptomato paste
-
2 tsppaprika
-
1/4 - 1/2 tspwhite pepper
-
2 tspvirgin olive oil
-
2 Tbspbutter, melted
-
1 - 2 Tbsplemon juice
-
1 - 2 tsplemon, zest, garnish

1 - 2 Tbspfresh parsley, chopped, garnish
How To Make crispy roasted potatoes

1Preheat oven to 400 F.

2Cover a cookie sheet with tin foil, then set aside until required.

3Cook the potatoes in a pot of boiling salted water until almost tender about 10 minutes.

4Add the following ingredients Into a large bowl: 1/2 tsp sea salt, garlic, parsley, thyme, tomato paste, paprika, white pepper, olive oil and melted butter. Mix well.

5Drain the potatoes and add them into the large bowl, making sure all potatoes are well coated.

6Place the potatoes on the prepared sheet, and bake in the preheated 400 oven for 40-50 minutes, turning halfway, until they are golden and crispy.

7Remove the potatoes from oven and drizzle with the lemon juice. Taste and re-season with salt and pepper if necessary. Garnish with the parsley and lemon zest. Enjoy!
