Beautiful crispy, flavorful potatoes. It doesn't get better than this. We hope you will enjoy this lovely dish that is the perfect side for most meats.

Ingredients For crispy roasted potatoes

  • 4 md
    potatoes, unpeeled, chop 1 1/2 " pieces
  • 1/8 tsp
    sea salt + 1/2 tsp
  • 1 - 2 clove
    garlic, fresh, minced
  • 2 Tbsp
    fresh parsley, chopped
  • 1
    small, fresh, thyme sprig, remove leaves
  • 1 Tbsp
    tomato paste
  • 2 tsp
    paprika
  • 1/4 - 1/2 tsp
    white pepper
  • 2 tsp
    virgin olive oil
  • 2 Tbsp
    butter, melted
  • 1 - 2 Tbsp
    lemon juice
  • 1 - 2 tsp
    lemon, zest, garnish
  • 1 - 2 Tbsp
    fresh parsley, chopped, garnish

How To Make crispy roasted potatoes

    Preheat oven to 400 F.
  • 2
    Cover a cookie sheet with tin foil, then set aside until required.

    Cook the potatoes in a pot of boiling salted water until almost tender about 10 minutes.

    Add the following ingredients Into a large bowl: 1/2 tsp sea salt, garlic, parsley, thyme, tomato paste, paprika, white pepper, olive oil and melted butter. Mix well.

    Drain the potatoes and add them into the large bowl, making sure all potatoes are well coated.

    Place the potatoes on the prepared sheet, and bake in the preheated 400 oven for 40-50 minutes, turning halfway, until they are golden and crispy.

    Remove the potatoes from oven and drizzle with the lemon juice. Taste and re-season with salt and pepper if necessary. Garnish with the parsley and lemon zest. Enjoy!
