Ingredients For crispy potato fritters

  • 2 lg
    russet potatoes , peeled and grated, about 2lbs
  • 1 lg
    onion, chopped finely
  • 3 Tbsp
    fresh parsley, minced
  • 2
    eggs, beaten
  • 3-4 Tbsp
    flour, as needed
  • salt and pepper, to taste

How To Make crispy potato fritters

  • 1
    Place grated potatoes in a dish towel and pat completely dry.
  • 2
    Mix potatoes, eggs, onions, parsley together. Add enough flour to make the mixture stick together.
  • 3
    Fry the mixture in hot oil approx. 350 F until golden brown on both sides.

    Drain on paper towels
