2 lgrusset potatoes , peeled and grated, about 2lbs

1 lgonion, chopped finely

3 Tbspfresh parsley, minced

2eggs, beaten

3-4 Tbspflour, as needed

salt and pepper, to taste
How To Make crispy potato fritters

1Place grated potatoes in a dish towel and pat completely dry.

2Mix potatoes, eggs, onions, parsley together. Add enough flour to make the mixture stick together.

3Fry the mixture in hot oil approx. 350 F until golden brown on both sides.

4Drain on paper towels
