Ingredients For crisp potato cakes

  • 4 c
    left over mashed potatoes
  • 1/4 c
    onion (chopped)
  • 2 c
    panko bread crumbs (divided)
  • 1 lg
    egg (lightly beaten)
  • 1/4 c
    vegetable oil (more if needed)

How To Make crisp potato cakes

    In a large bowl, combine the mashed potatoes, 1 cup panko, onion, & beaten egg.
  • 2
    Shape the potato mixture into 3 inch patties. Dredge the patties in the remaining 1 cup panko.

    In a large nonstick skillet over medium heat, add the vegetable oil. add half of the patties and cook untill golden brown 2 to 3 minutes each side. Drain on paper towels. add the rest of the patties.
