I normally don't throw something together to serve without it first passing my husband's taste test, but I had to make an exception recently. I served this dish at a women's church brunch last week. My husband loved the flavors so much that he asked me to post the recipe (before I forgot it...lol). I plan on fixing this again with bacon, sausage or Spam and serving it as a breakfast dish.

Looking to spice up your holiday side dishes? Try this flavorful hash brown casserole. We loved the Creole spin on a traditional side dish. Rotel and Creole seasoning add a kick of delicious flavor.
