I WAS HAVING A HOUSEFUL OF FAMILY FOR CHRISTMAS DINNER LAST YEAR, AND I RAN OUT OF BUTTER, SO I ADDED IN AN 8 OUNCE BLOCK OF CREAM CHEESE. I HAD ALREADY PLANNED ON USING A ROASTED GARLIC FOR THE POTATOES AS WELL, I PUT IN A WHOLE BULB, IT WAS AWESOME, EVERYONE WANTED TO KNOW WHAT I DID TO THEM TO MAKE THEM TASTE SO GOOD....

1PEEL AND CUT UP RUSSET POTATOES IN CHUNKS, ...COOK IN A LARGE DUTCH OVEN TILL DONE, ABOUT 20 - 25 MINUTES WHILE THE POTATOES ARE COOKING, CUT THE TOP 1/3 PART OFF THE GARLIC BULB, POUR A LITTLE OLIVE OIL OVER AND SPRINKLE WITH SALT AND PEPPER..WRAP IN FOIL AND ROAST FOR 45 MINUTES TO 1 HOUR..(IT DEPENDS ON THE SIZE)..

2WHEN THE POTATOES ARE DONE COOKING, DRAIN THE POTATOES, AND ADD THE CREAM CHEESE AND THE ROASTED GARLIC....(YOU JUST SQUEEZE THE GARLIC SO THAT ALL THE COOKED GARLIC IS PUT INTO THE POTATOES, AND THEN DISCARD THE PEEL) USING YOUR ELECTRIC HAND MIXER, BLEND THE POTATOES, CREAM CHEESE, AND GARLIC TOGETHER....(YOU CAN USE A POTATO MASHER IF YOU DON'T HAVE AN ELECTRIC HAND MIXER)...
