I made these for the my hubby, dad and son for Thanksgiving instead of my usual streusel topped sweet potato casserole. They enjoyed them as something different. They aren't nearly as sweet as your typical sweet potato casserole but they are a little bit healthier if you are looking for something in that direction. Just a 'little' bit though. These don't have tons of cream, sugar, brown sugar and butter in them like the casseroles do. Get your roasted sweet potatoes in the freezer section of your super market. Ingredients For cranberry bacon sweet potatoes-annette's

6 slicebacon, cooked and chopped

2 lbroasted sweet potatoes

1 cdried cranberries

1/2 cmaple syrup

1/2 cpecan halves
-
2 Tbspbrown sugar
-
2 Tbspolive oil
-
4 Tbspbutter
-
1 tspcayenne pepper
-
1/2 tsppumpkin pie spice
-
2green onions, sliced
-
dash of salt (optional)
How To Make cranberry bacon sweet potatoes-annette's

1Save yourself some time. Buy your roasted sweet potatoes in the freezer section of the super market. Thaw them slightly.

2Heat olive oil in skillet over medium heat. I used an electric skillet.

3Sauté potatoes, cranberries, and bacon about 6-8 minutes.

4Add butter and cook 2 more minutes.

5Stir in maple syrup, cayenne pepper, brown sugar, pumpkin pie spice and salt. Cook an additional 2 minutes.

6Arrange on serving plate, platter or bowl and top with green onions. Add some pecan halves for additional flavor and crunch. Enjoy!
