this is a nice recipe for an appetizer if using small new red potatoes, or a nice side dish for a seafood platter. My man loves twice baked potatoes and this was a pleasant surprise for him

Ingredients For crabby potatoes

12 smred potatoes
-
1 tspolive oil
-
4 ozflaked cooked crabmeat

2 Tbspeach plain yogurt and hellmans mayonaise

2 Tbspminced chives or green onions thinly sliced

1 tsplemon juice
-
1 Tbspchopped fresh parsley
-
2 Tbspgrated parmesan cheese
-
pepper to taste
How To Make crabby potatoes

1pierce potatoes several times, toss in olive oil and bake on a shallow baking pan at 375 degrees 45 to 55 minutes. let cool slightly (at this point you can cover and refrigerate one day.

2cut potatoes in half and with a melon baller remove potato to leave a 1/4" shell

3set potato skins open side up on a shallow baking pan.

4In a small bowl combine crab, yogurt, mayonaise, chives, lemon juice and cheese.

5season to taste with pepper. blend well. spoon mixture into potato shells.

6place potatoes under broiler about 4" and broil until golden brown. 3 to 5 minutes.

7I have done this with bigger potatoes adding in some of the scooped out potato. (4) baking potatoes
