this is a nice recipe for an appetizer if using small new red potatoes, or a nice side dish for a seafood platter. My man loves twice baked potatoes and this was a pleasant surprise for him

Ingredients For crabby potatoes

  • 12 sm
    red potatoes
  • 1 tsp
    olive oil
  • 4 oz
    flaked cooked crabmeat
  • 2 Tbsp
    each plain yogurt and hellmans mayonaise
  • 2 Tbsp
    minced chives or green onions thinly sliced
  • 1 tsp
    lemon juice
  • 1 Tbsp
    chopped fresh parsley
  • 2 Tbsp
    grated parmesan cheese
  • pepper to taste

How To Make crabby potatoes

    pierce potatoes several times, toss in olive oil and bake on a shallow baking pan at 375 degrees 45 to 55 minutes. let cool slightly (at this point you can cover and refrigerate one day.

    cut potatoes in half and with a melon baller remove potato to leave a 1/4" shell

    set potato skins open side up on a shallow baking pan.

    In a small bowl combine crab, yogurt, mayonaise, chives, lemon juice and cheese.

    season to taste with pepper. blend well. spoon mixture into potato shells.

    place potatoes under broiler about 4" and broil until golden brown. 3 to 5 minutes.

    I have done this with bigger potatoes adding in some of the scooped out potato. (4) baking potatoes
