Ingredients For country-style supper skillet

  • 1/2 lb
    bacon, chopped
  • 3 c
    potatoes, peeled, cooked and diced
  • 1 c
    tomato, chopped
  • 1/2 c
    onion, chopped
  • 1/2 c
    green pepper, chopped
  • 1 tsp
    garlic, chopped
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 1/2 c
    shredded sharp cheddar cheese

    eggs

How To Make country-style supper skillet

  • 1
    Cook bacon over medium heat in a laaarge deep skillet until crisp, partially drain drippings, reserving some in skillet. Add vegetables, garlic, salt and pepper, saute in pan drippings about 5 minutes or until tender. Sprinkle with cheese. Make 8 wells for eggs; crack eggs into wells about 2 inches apart. Reduce heat; cover and cook eggs over medium heat 10 to 12 minutes or to desired degree of doneness.
