country style grn beans w potatoes-onion & bacon

I made this dish for dinner on yesterday, it really brought back memories of my childhood. When mama would gather green Beans, onions & Potatoes fresh from the garden, & make this tasty dish for dinner. All the vegetables were so fresh & very tasty, then when I chatted with my brother he said he had made the same dish on Saturday, & ate left overs on Sunday. So that is how I arrived at this title for the dish. I also added minced garlic, the beans were frozen, they cooked faster than expected, so I drained the liquid to a smaller pot, and cooked the potatoes in the grn bean liquid.

Ingredients For country style grn beans w potatoes-onion & bacon

  • 2 lb
    fresh or frozen whole green beans
  • 4 c
    potatoes peeled & cubed
  • 2 lg
    onions peeled & cubed
  • 1/2 c
    crumbled bacon bits
  • 1/2 stick
    butter
  • 1-1 1/2 tsp
    coarse black pepper
  • 4-5 clove
    fresh garlic minced

How To Make country style grn beans w potatoes-onion & bacon

    Add green Beans to a large pot, cover with water.

    Add the chopped onions and minced garlic & BRING TO A BOIL. COOK TILL CRISP TENDER, ABOUT 20 MINUTES OR AS DESIRED. Add salt and pepper if desired.

    Drain water from green bean pot to a smaller pot. Add the cubed potatoes, and cook till potatoes are tender. Drain the liquid and add the potatoes to the pot of green beans.

    Add the crumbled bacon bits, and butter, stir to mix together. Taste first and see if additional salt and pepper is needed. I did not use salt because the bacon bits are already salty.

    Pour into a serving dish and serve while still hot. How could such a simple dish taste so good. It was very good, and rekindle memories of my childhood all in one.
