Ingredients For colorful roasted potatoes

2 lbassorted colorful potatoes, sliced in half

1 smonion, chopped

2 clovegarlic, chopped

3 Tbspolive oil

3 Tbspbutter, melted

3 lgbasil leaves, chopped

1 lgrosemary sprig

salt and pepper, to taste

4 Tbspfresh grated parmesan or roman cheese

3 Tbspscallions, chopped for garnish
How To Make colorful roasted potatoes

1Preheat oven to 350 degrees

2In large baking dish add potatoes, onion, garlic, oil, butter, basil, rosemary, salt and pepper. Toss to evenly coat.

3Bake in oven for approx. 40-50 mins or until potatoes are soft, stirring half way through baking time.

4Before serving add grated cheese and scallions.
