How To Make cold oil method french fries
-
1Do not wet potatoes. Use a vegetable peeler to peel them. Cut each potato into 1/4-inch slices, then into 1/4-inch strips.
-
2Place in a bowl - Again, do not get them wet! Add oil to a large heavy pot. Add all the potato sticks to the cold oil. Add more oil if there is not enough to cover potato sticks.
-
3Turn the heat to high. Do not cover pot. Let oil come to a boil and boil for 15 minutes; use strainer to move the potatoes gently around. Let boil for 5 more minutes or until golden brown. Might take 10 minutes more.
-
4When golden, scoop out with strainer and place on a parchment or towel large cookie sheet to drain, if any oil is on them. Sprinkle with salt and pepper or you favorite spice and enjoy.
