How To Make colcannon

1PEEL AND QUARTER POTATOES. IN A LARGE PAN, COVER THE POTATOES WITH WATER. BRING TO A BOIL OVER HIGH HEAT. LOWER THE HEAT AND SIMMER, COVERED FOR 20-25 MINUTES OR UNTIL TENDER. DRAIN.

2MEANWHILE, IN ANOTHER PAN, BRING 1/2 INCH OF WATER TO A BOIL OVER HIGH HEAT. ADD THE CABBAGE AND ONIONS. LOWER HEAT AND SIMMER COVERED, FOR 8-10 MINUTES OR UNTIL TENDER. DRAIN.

3IN A MEDIUN SIZED BOWL, WITH AN ELECTRIC MIXER ON LOW, BEAT THE POTATOES UNTIL ALMOST SMOOTH. ADD THE MILK, BUTTER, SALT AND PEPPER. BEAT UNTIL LIGHT AND FLUFFY. STIR IN CABBAGE MIXTURE AND PARSLEY.
