Ingredients For colcannon

  • 3 lb
    potatoes (scrubbed
  • 2 stick
    butter
  • 1 1/4 c
    milk
  • freshly ground black pepper (amount your choice)
  • 1
    head of cabbage, cored and chopped
  • 1 lb
    piece of ham or bacon, a day ahead of time.
  • 4
    scallions, finely chopped
  • chopped fresh parsley for garnish
  • garlic to taste

How To Make colcannon

  • 1
    Steam or boil the potatoes in skin for 30 minutes. Chop with a knife before mashing. Peel or not (your choice) Mash leaving some lumps. dd stick of the butter in pieces.

    Gradually add hot milk,stirring all the time. Season with a few grinds of black pepper, add garlic to taste.

    Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoon butter leave abit crunch. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.

    Put the ham in a large saucepan and cover with water. Bring to a boil and simmer for 45 minutes until tender. Drain, remove any fat and chop into small pieces (you can also use bacon lots of it here.)

    Add cabbage, scallions, and ham to mashed potatoes, stiring them gently Serve in individual plates, Make an indentation on the top by swirling with a wooden spoon. Put one tablespoon of butter into each indentation. Sprinkle with parsley.
