I found this recipe around 2006 and its been a big hit for Thanksgiving and Christmas. Though my husband prefers it for dessert rather then a side dish.

Ingredients For classic sweet potato casserole

6 mdsweet potatoes

1/4 csugar( optional)

1/2 cmilk

1/2 cplus 2 tbsp butter. melted and divided

2 lgeggs

1 tsppure vanilla extract

1/2 tspsalt
-
1/2 clight brown sugar
-
3 Tbspall-purpose flour
-
1/2 cchopped walnuts or pecans

14 lgmarshmallows cut crosswise
How To Make classic sweet potato casserole

1Pierce potatoes with fork. Cook on high in microwave until tender, turning once, about 8 minutes per side. Cut open; cool. Spoon potato flesh into bowl; mash until smooth. Measure 3 cups mashed potatoes.

2Preheat oven to 350 degrees F. Coat 11/7 baking dish with nonstick cooking spray; set aside. ( I typically use the disposable baking dishes instead.)

3Combine mashed sweet potatoes, granulated sugar, milk, 1/3 cup butter, eggs, vanilla and salt in medium bowl; stir to mix well. Spoon into prepared dish.

4Combine brown sugar and flour in small bowl; stir to mix well. Sprinkle over sweet potato mixture. Sprinkle with nuts; drizzle with remaining 2 tablespoons of butter. Bake 20 minutes.

5Remove from Oven and arrange marshmallow. Bake for another 10 minutes or until the marshmallows are golden brown.
