I created this scalloped potatoes recipe filled with pork chorizo sausage. It's very good with fried chicken and green peas.

Ingredients For chorizo scalloped potatoes

  • 1 Tbsp
    avocado oil
  • 2 lb
    pork chorizo sausages, casing removed and crumbled
  • 1 md
    red onion, peeled and diced
  • 3 Tbsp
    all purpose flour
  • 2 c
    heavy cream
  • 1 Tbsp
    sea salt mixed with black pepper
  • 1 tsp
    garlic powder
  • 1/2 c
    grated Parmesan cheese
  • 2 lb
    russet potatoes, rinsed and scrubbed clean
  • 2 c
    shredded extra sharp cheddar cheese

How To Make chorizo scalloped potatoes

    Preheat oven to 400 degrees F. Coat a 9x9 baking dish with cooking spray.

    Heat avocado oil in a medium saucepan over medium heat. Add crumbled chorizo sausages and diced red onion; cook for 5 minutes until the sausages are browned. Reduce to low heat.

    Use a slotted spoon to removed sausage mixture out of saucepan and transfer to a large plate; set aside.

    Add flour to sausage drippings over medium-low heat. Whisk together to form a roux and cook for 2 minutes. Stir in heavy cream, sea salt/black pepper, garlic powder and Parmesan cheese.

    Bring roux to a simmer and let thicken about 2 to 3 minutes. Remove from heat.

    Peel potatoes and thinly slice each crosswise into thin coins.

    Spoon a thin layer of sauce into the bottom of a baking dish. Add a single layer of sausage mixture on top.

    Add a single layer of potatoes over the sausage mixture. Spoon more sauce over the potatoes and sausage mixture and top with shredded extra sharp cheddar cheese. Repeat layers 3 times.

    Bake at 400 degrees F for 25 minutes or until golden brown. Cool completely.
