Ingredients For cheesy mashed sweet potatoes, cauliflower & broccoli

1 1/2 lbsweet potatoes, skins on, cut into 1 (or regular baking potatoes)

1 bagbroccoli florets, frozen

1 bagcauliflower, florets, frozen

2 stickbutter, cold

4 cmozzarella cheese
-
3/4 tspsalt
-
1/4 tspblack pepper
-
1 - 16 ozsour cream
-
2 Tbspparsley
How To Make cheesy mashed sweet potatoes, cauliflower & broccoli

1In a large pot, combine potatoes, broccoli, cauliflower with enough salted water to cover. Over high heat, bring to boil; reduce heat to medium-high. Cook until tender, about 20 minutes. Drain, reserving 1/2 C cooking water.

2Meanwhile, coat 13" x 9" baking dish with cooking spray. Position broiler rack so that top of baking dish will be 4" from the heat source; preheat broiler.

3Return potato mixture to pot; mash all. Stir in butter & reserved hot water. Stir in 3/4 C of cheese, salt, pepper & sour cream, mix well. Trasfer to baking dish.

4Sprinkle potato mixture with the rest of cheese. Broil until browned, about 5 minutes. Let stand 10 minutes before serving. Sprinkle with parsley. Enjoy!
