Ingredients For cheesy garlic potatoes (sallye)

3 lbnew red potatoes or fingerlings

3 clovegarlic

1/4 cbutter

3 Tbspolive oil

1/4 cgrated parmesan cheese

1 tsplemon zest
-
juice of one lemon
-
2 Tbspchopped fresh basil (or parsley)

1/2 tspcornstarch
-
1 Tbspeach of salt & pepper
How To Make cheesy garlic potatoes (sallye)

1Preheat oven to 350ºF Spray 9" square baking dish with non-stick cooking spray (I use olive oil spray)

2Scrub potatoes, do not remove peels Cut potatoes into halves or quarters and spread out in baking dish

3In cast iron or heavy skillet, melt butter over medium heat Add olive oil Mince garlic and add to butter mixture; cook until garlic is translucent (about 3 minutes) Remove from heat

4Add lemon juice, zest, salt, pepper, and cornstarch. Stir to mix into a quasi roux Add chopped basil (or parsley) and cheese Whisk briskly until well mixed Pour over potatoes in baking dish until all potatoes are covered Add a little cream or milk a tablespoon at a time if necessary to ensure all potatoes are covered.

5Cover dish with foil and seal edges. Cook covered in preheated oven for 30 minutes Uncover and cook ten more minutes or until potatoes are golden brown
