~ cass's countrified franks & tater skillet ~

One of my families favorite comfort dishes. I've also added different beans to this at the end, for added hardiness. Kids aren't much into beans, so I didn't add this time, but it's an option. The paprika gives this dish a great flavor. I love taking limited ingredients, yet getting such a wonderful flavor. Enjoy!

Ingredients For ~ cass's countrified franks & tater skillet ~

  • 1 Tbsp
    oil or bacon fat
  • 1 md
    onion - chopped
  • 6
    of your favorite hot dogs, sliced
  • 5 - 6 md
    potatoes - i used red - peeled and cubed
  • 2 c
    chicken broth
  • 1/2 c
    diced, green bell pepper
  • 1 Tbsp
    paprika
  • salt
    & pepper to taste if desired

How To Make ~ cass's countrified franks & tater skillet ~

    In a cast iron skillet or a medium skillet of your choice, add fat, onions and sliced hot dogs, over medium heat cook until hot dogs are browned and onion is soft, stirring occasionally.

    To the skillet add, potatoes, peppers, broth and paprika. Simmer for 30 minutes or until potatoes are tender and broth is mostly absorbed.

    Serve hot with some crusty bread and maybe a side veggie.
