Ingredients For carne asada fries
- CARNE ASADA

5 clovegarlic

1 lgjalapeño pepper, seeded and ribs removed

1/2 ccilantro

2 Tbspbrown sugar

1 Tbsppureed chipotle in adobo

2 Tbspfreshly squeezed lime juice
-
1/2 Tbspground cumin
-
1/2 tspground Himalayan pink salt
-
1/2 tspfreshly ground black pepper (I always use mixed peppercorns)

2 Tbspcanola oil, plus more to oil the grates
-
1/4 cfreshly squeezed orange juice
-
1 lbbeef round roast, flank or skirt steak
- FRIES

1 bagfrozen fries, cooked (1 lb. 10 oz.)

2 1/2 ccheddar cheese sauce
-
1 cpico de gallo
-
4 scoopguacamole
-
4 Tbspsour cream or crema, or to taste

4 lglime wedges, for garnish
How To Make carne asada fries

1To make the carne asada, add all ingredients except beef to the bowl of a food processor and process until blended.

2Place half the meat slices in a large bowl and pour half the marinade over it; toss well to coat.

3Transfer the meat to a large re-sealable plastic bag; repeat with remaining meat slices and marinade.

4Transfer the bag to the fridge and marinate for 6 to 18 hours.

5Remove the bag from the fridge and bring the meat to room temperature, about 30 minutes.

6Meanwhile, turn the barbecue’s temperature to 450 - 500 degrees F and oil the grates. Place the meat on the grill and cook for 1 to 1 and a half minutes per side – don’t overcook.

7Remove from the heat, loosely cover with foil, and let the meat slices rest for 2 minutes before cutting them into bite-sized pieces.

8To assemble the dish: Cover the bottom of a plate or bowl with the cooked French fries and top with the meat pieces. Drizzle on the cheese sauce, spoon on the Pico de Gallo, add a big scoop of guacamole, and finish with sour cream.

9Garnish with lime wedges and serve immediately.
