My grandchildren love Campfire Potatoes with Grilled Shrimp Skewers. I love that everything is on the grill and the clean up is so easy. I usually serve Grilled Garlic Mushrooms and Grilled Vegetable Kabobs.

Ingredients For campfire potatoes

6 lgpotatoes, peeled and thinly sliced

1 lgonion, thinly sliced

1/2 ccheddar cheese, shredded

2 Tbspfresh parsley, chopped

1 Tbspworcestershire sauce
-
kosher salt and freshly ground black pepper

1/3 cchicken broth
-
6 slicebacon, cooked and crumbled (optional)
How To Make campfire potatoes

1Place the potatoes and onion on a large piece of heavy-duty foil (about 12"x 20"); dot with butter.

2Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes.

3Fold foil up around potatoes and add broth and bacon pieces if using. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
