One time when we went to Silver Dollar City they had something similar to this there, but it had sausage in it. I came up with my version minus the sausage to be used as a side dish.

Ingredients For calico potatoes

  • 2 lg
    sweet potatoes
  • 2 or 3 lg
    baking potatoes (you want about an equal amount of each type of potato)
  • 1
    med or large green pepper/red pepper
  • 1 lg
    sweet onion
  • 1 stick
    butter or marjarine
  • 4 tsp
    salt (more if needed)
  • 1 tsp
    pepper

How To Make calico potatoes

    Peel all potatoes. In large pan fitted with a lid, melt the stick of butter/marjarine on low heat. While butter is melting, cut all potatoes into chunks (whatever your size preference, but the larger the longer to cook).

    Add potatoes to melted butter and mix well to coat. Cut peppers and onion into chunks as well and add to potatoes. Again, mix to coat.

    Cover pot over med/low heat to prevent scorching and stir occasionally. Test for tenderness of potatoes. Remove lid when tender to brown slightly if you wish.
