This is one I can't stop using because it is so tasty. You can mash your potatoes or leave to your taste. KEY TO FLAVOR IS THE CAJUN SEASONING. And remember to soak potatoes overnight in water to take out unwanted starch; it makes the potatoes fluffy and better tasting. This is a tip from one of you and it works... Thanks girls.

One of my favorite sides at BBQ's and a picnic is potato salad. I would be proud to take this tasty one to my next gathering. It is so creamy and the chopped pickles add another depth of flavor. The Cajun seasoning gives a nice little kick and it is so easy to control how much you add to the dish. Delish!

Ingredients For cajun potato salad brandy's way

8new potatoes

6eggs, hard boiled
-
1/2 to 1 cchopped onion; to taste

1/2 to 1 cchopped pickles

Cajun seasoning (I use Tony Chachere brand )

2 cHellmans mayo
-
3 TbspFrench's mustard
-
2 Tbspsour cream
-
black pepper
How To Make cajun potato salad brandy's way

1Boil potatoes and drain and cool completely.

2Dice hard boiled eggs, pickles and onions and place in a large bowl. Sprinkle lightly with Cajun seasoning. Place in fridge to set while potatoes cool.

3Mash or cube cooled potatoes to your liking.

4Mix mayo, mustard sour cream together.

5Place potatoes over the chopped veggie and egg, slowly pour mayo mixture over the salad. Sprinkle with Cajun seasoning and lightly stir to mix well.

6I saved one egg and a couple of spoons of the pickles and onions for garnish. Sprinkle a little Cajun seasoning over all to top. Cool and serve. Enjoy!
