This is a great pot luck recipe. I remember my mom making it to take to church breakfast's on Sunday mornings. It was always fun to help make this. We have chickens and they lay so many eggs that we have this for dinner sometimes too. Another thing I like about this recipe is that you can kind of add anything you want to it. Including a layer of spinach if you want.

Ingredients For brunch casserole

6 to 8potatoes, sliced

8 to 10eggs
-
1/2 cchopped green onions (optional)

1/2 cchopped green peppers (optional)

1/2 cchopped celery (optional)

1/2 cmushrooms diced (optional)

1 cshredded cheddar cheese
-
1 pkgof jimmy dean sausage

1 dashms. dash seasoning table blend

1/4 ccream or half and half
How To Make brunch casserole

1Grease bottom of 13 X 9 Baking dish. Preheat oven to 350 degrees.

2Scramble eggs in a bowl with cream and set aside. Fry Potatoes and Set to the side to drain. Brown Sausage and other ingredients.

3In dish layer Potatoes, Sausage mixture, Cheese. Keep layering in this manner till all ingredients are used. Pour Scrambled eggs over mixture. Bake until center is set.
