I enjoyed this type of potato cake in a restaurant and went home and created this recipe, using my mother's basic potato pancake recipe.

Ingredients For brocolli potato cakes

1egg
-
1/4 cmilk
-
1/4 cflour
-
1/2 tspseasoned salt
-
1/2 tspregular mrs. dash
-
4 mdpotatoes, grated
-
1stalk of brocolli flowerettes chopped and stalk grated

1 smonion, finely chopped
-
olive oil, your favorite kind
How To Make brocolli potato cakes

1Mix together egg, milk, flour, seasoned salt, and Mrs. Dash.

2Mix with potatoes, broccoli, and onion.

3Heat a teaspoon of Olive Oil in a non stick frying pan.

4Add the potato/broccoli mixture by the tablespoonful shaped into pancakes. Brown on each side until the potatoes and broccoli are cooked.

5Remove and drain on paper towels. Keep warm until ready to serve. Serve with butter, margarine, or sour cream.
