Just adopted this recipe, will be making it soon and letting you know what I think! and will post pictures!
Ingredients For breakfast baked potatoes

2 smpotatoes

1egg, fork beaten with a little milk

2 slicetoast, crumbled

1 slicecheddar or processed cheese

salt and pepper to taste

garlic powder to taste
How To Make breakfast baked potatoes

1Scrub potatoes, but do not peel.

2Slice lengthwise into fourths.

3Butter a shallow microwave-safe baking dish.

4Dip potato slices first into the egg, then into the crumbs to coat.

5Place the slices in the baking dish.

6Top with any remaining crumbs.

7Dot with a tablespoon of butter, if desired.

8Microbake on 100% power 3-5 minutes, or until potato is tender and batter is set.

9If desired, top with the slice of cheese and microwave 1 minute more to melt.

10Sprinkle with seasonings.
