These are really called Pennsylvannia Dutch Potato Fritters but they call them Boofers for short. Again my son loved them and so did his friends.

Ingredients For boofers

  • 2 c
    grated raw potato
  • 1 sm
    grated onion
  • 1 lg
    egg, beaten
  • 1/4 tsp
    salt
  • 1 dash
    pepper
  • 1 Tbsp
    chopped parsley
  • 1/2 tsp
    baking powder
  • 4 Tbsp
    all purpose flour

How To Make boofers

  • 1
    Place potatoes in a strainer to drain off all liquid. Add onion, egg, salt, pepper, parsley, baking powder, and flour. Mix well. Drop by teaspoonfuls into deep hot fat and fry 5 minutes. Drain on paper towels.
