Who say's breakfast for dinner has to be boring, and same 'ol, same 'ol? I don't know about your family, but in my family... the kids will NOT TOUCH LEFTOVERS!!! It's like leftovers are a "science experiment" or something!! It can sit in the fridge for days, *gasp* till it literally becomes a science experiment!! That being said, leftovers are designated to our "human garbage disposal", (aka my dh) or me!! So I'm alway's trying to come up with creative ways to use up leftovers making them into totally different meals that the kids will gobble up and makes mommy happy!!

Ingredients For beefy beef hash

  • 4-5 slice
    leftover beef roast (any kind)
  • 2-3 lg
    leftover baked potatoes (or steam/nuke if needed or can use frozen diced)
  • 1 lg
    onion
  • 1 c
    reserved drippings/beef broth
  • 1 1/2 tsp
    marjoram, dried (or dried thyme)
  • 2 Tbsp
    butter
  • 1 Tbsp
    olive oil, extra virgin
  • salt & pepper to taste
  • *eggs - usually 2 per person*
  • toast - see directions below

How To Make beefy beef hash

    Grill and toast your leftover bread from the roast dinner, butter, place in basket and set aside

    Dice your leftover potatoes, set aside. If you don't have any leftover potatoes, then quickly steam/nuke a few or use the frozen diced potatoes.

    Roughly dice your onions.

    Dice your leftover roast slices finely, fatty parts and all... it will sizzle and melt down just nice, and crisp up and just become delectable and DELICIOUS and.... Oh my, THAT'S MY FAVORITE PART!!

    In a large skillet, add your butter and extra virgin olive oil, heat till butter has melted.

    Add your diced onions and saute till they are softened, about 2-4 minutes or so. Not browned!

    Once the onions are softened, add your diced potatoes, and saute for about 2 minutes or so.

    Now comes the amazing flavor... are you ready??? Okay, okay, pour over your reserved roast drippings/sauce.

    I've totally skimmed all fat from the drippings/broth after refridgeration, so what is left is amazing BEEF/ONION FLAVOR, with pieces of roasted onion...

    Add your seasonings and stir till all the seasonings have been thoroughly mixed thru. Let cook for about 3-4 minutes till broth has been absorbed.

    Now, add your diced leftover beef, and cook till crispy, turning over every few minutes.

    See how cripsy this becomes?? Total cooking time, I would say about 10 minutes, give or take a few. I usually cook till it's nice and crispy!!

    When the hash has become crispy to your liking, turn off heat, and cover to keep warm. In a small skillet, fry/poach a couple of eggs. Top this amazing hash with the eggs, and side with your grilled bread... I add a few (well okay, quite a few) shakes of tabasco sauce on mine, kids add *GULP* Ketchup!! No matter... we all love this dish, it's easy, delicious and makes you LOVE BEING HOME!!!! Enjoy!!
