Ingredients For kat's balsamic roasted potatoes

1 lgbaking potato

1/4 cchopped red onion( medium diced)

1/4 cchopped bell pepper( medium diced)

1 clovegarlic minced or 1tbs garlic powder

1/2 cbalsamic vinegar
-
1/4 colive oil, extra virgin

kosher salt
-
coarse ground black pepper
How To Make kat's balsamic roasted potatoes

1wash potato and slice length wise in half, make 3 slices out of each half and then dice into 1 1/2 in chunks, in an oven proof skillet ( i used my iron skillet and put a piece of heavy foil in, easy clean up and i just made a pouch with the foil before putting in oven)

2add oil to hot skillet, then add onion, pepper, garlic and potatoes, add some coarse ground black pepper and kosher salt, stir around then add balsamic vinegar, cook on stove stop for about 5 minutes, cover with foil and put in a 350 degree oven for 35 minutes
