Ingredients For baked sweet potatoes with honey-mint butter

1/4 lbbutter, softened

1 1/2 tsphoney

1/2 tspfresh mint, chopped

How To Make baked sweet potatoes with honey-mint butter

1For the butter: Cream butter, then beat in honey and mint. Season with salt, and 1/8 teaspoon pepper; set aside. Scrub potatoes.

2Cooking: Adjust oven rack to middle position and heat oven to 450ºF. Bake sweet potatoes until tender, about 1 hour.

3Serving: Cut potatoes open and fill each with a dollop of butter.
