Ingredients For baked sweet potatoes with honey-mint butter

  • 1/4 lb
    butter, softened
  • 1 1/2 tsp
    honey
  • 1/2 tsp
    fresh mint, chopped
  • 4 md
    sweet potatoes

How To Make baked sweet potatoes with honey-mint butter

  • 1
    For the butter: Cream butter, then beat in honey and mint. Season with salt, and 1/8 teaspoon pepper; set aside. Scrub potatoes.

    Cooking: Adjust oven rack to middle position and heat oven to 450ºF. Bake sweet potatoes until tender, about 1 hour.

    Serving: Cut potatoes open and fill each with a dollop of butter.
