4 lgidaho potatoes scrubbed

1 ccorn kernels

8 ozsoft butter

1shallot chopped

1 tsplime juice

3 Tbspchives chopped

How To Make baked potato with shallot corn butter

1Preheat oven 400 degrees. Prick the potatoes with a fork. Bake the potatoes until a fork goes in easily Remove from oven and cut down the middle. Season with salt and pepper

2Cook the corn kernels in boiling water for about 3 minutes. Drain.

3Place the shallots, butter, lime juice, half of the corn kernels and chives in a food processor. Process until well mixed. Stir in the other half of the corn and put on top of potatoes
