This recipe is a favorite at family get togethers. I like potato salad and wanted a recipe that would kick it up a notch.

Ingredients For baked potato salad

  • 8-10 md
    potatoes, baked and cubed
  • 1 c
    sour cream
  • 1 1/2 c
    hidden valley buttermilk ranch dressing
  • 1 pkg
    oscar meyer bacon pieces
  • 2 Tbsp
    butter
  • 1 md
    onion, chopped
  • salt and black pepper, to taste
  • 2 c
    shredded monterery and cheddar cheese

How To Make baked potato salad

  • 1
    Baked potatoes in microwave oven according to microwave directions or in an oven wrapped in aluminum foil for 45 minutes to 1 hour. Cool slightly and cut into cubes.

    Saute onion in the 2 tablespoons of butter until transparent or soft.

    Combine potatoes, sauted onions, including butter, and the rest of the ingredients in a serving dish. Serve warm.
