Need an easy potato side dish? Try this baked mashed potato casserole. No one will ever guess it starts with instant potatoes. We thought it would need butter, but boy we were wrong. Once baked, the potatoes are soft and fluffy. Almost like a souffle. Crispy bacon on top adds a bit of savoriness to the creamy potatoes. An easy side dish for a weeknight dinner or a holiday meal.

Ingredients For baked mashed potato casserole

  • 3 c
    instant mashed potato flakes, prepared
  • 4 oz
    cream cheese
  • 1/2 c
    Monterey Jack cheese, shredded
  • 1/2 c
    cheddar cheese, shredded or cut into little pieces
  • 3 slice
    bacon, crisply fried and chopped
  • garlic salt, to taste
  • pepper, to taste

How To Make baked mashed potato casserole

  • Warming cream cheese in the microwave.

    This would work well with leftover potatoes as well. Soften your cream cheese in the microwave.
  • Cream cheese and Monterey Jack cheese mixed into potatoes.

    Then add to the mashed potatoes (works better if the mashed potatoes are hot as well). Stir in the Monterrey Jack and mix well. The potatoes will begin to look very fluffy - even instant ones.
  • Seasoning added to the potatoes.

    Then I added garlic salt and pepper to taste. Put the potatoes into a greased baking dish.
  • Cheese sprinkled over the potatoes.

    Set the oven to 350. Cut your sliced cheese into little pieces or shred regular cheddar. Sprinkle the cheese over the top of the casserole.
  • Chopped bacon sprinkled over the cheese.

    Then place the chopped bacon pieces over the top. I sprayed the top of the casserole with spray butter.
  • Potatoes baking in the oven.

    Bake for 30 minutes or until lightly browned on top and the cheese is melted. It will be almost like a souffle - really. Enjoy!!!
