Ingredients For bacon & potato patties

4 mdyukon gold potatoes, shredded

1/2 conion, very finely diced

4-6 slicebacon, very finely diced ( low sodium if preferred)

1 tspfresh parsley, finely chopped
-
1/4 tspcoarse black pepper
-
1egg
-
2 Tbspflour
-
course sea salt (omit if preferred)

canola oil
How To Make bacon & potato patties

1Dice onion & bacon, then shred potatoes. In a large bowl mix these ingredients together, add pepper, egg & flour. Wring out moisture in the potatoes before putting them in grease.

2Form small patties, place in about 1" of hot oil and lightly press down to flatten somewhat. Fry till done, turning once. Sprinkle with salt as soon as you remove them from grease.
