Ingredients For bacon & potato patties

  • 4 md
    yukon gold potatoes, shredded
  • 1/2 c
    onion, very finely diced
  • 4-6 slice
    bacon, very finely diced ( low sodium if preferred)
  • 1 tsp
    fresh parsley, finely chopped
  • 1/4 tsp
    coarse black pepper
  • 1
    egg
  • 2 Tbsp
    flour
  • course sea salt (omit if preferred)
  • canola oil

How To Make bacon & potato patties

  • 1
    Dice onion & bacon, then shred potatoes. In a large bowl mix these ingredients together, add pepper, egg & flour. Wring out moisture in the potatoes before putting them in grease.

    Form small patties, place in about 1" of hot oil and lightly press down to flatten somewhat. Fry till done, turning once. Sprinkle with salt as soon as you remove them from grease.
