I love sweet potato casseroles. I don't think I've ever made them the same way twice. Happy Thanksgiving!! Enjoy!

Ingredients For ~ awesome sweet potato casserole ~

2 - 29 ozcans, sweet potatoes, drained - or can use fresh cooked sweet potatoes ( mashed ) - i add extra sugar if using fresh. )

5 Tbspbutter, melted

1/4 ceach - brown sugar & granulated sugar

2eggs, beaten lightly

1 1/2 tsppure vanilla extract

3/4 tspcinnamon
-
1/3 cplus 2 tablespoons - heavy cream
- TOPPING
-
1 cchopped pecans
-
3/4 cpacked, brown sugar

1/4 cplus 1 tablespoon flour

3 Tbspmelted, butter
How To Make ~ awesome sweet potato casserole ~

1Preheat oven to 325 degree F. Grease a 9 x 13 baking dish or same sized casserole dish.. In a large bowl, mash potatoes, along with - melted butter, sugars, eggs, extract, cinnamon and cream. Spread mixture into prepared dish. In a dish, combine pecans, flour, butter and brown sugar. Crumble evenly over potato mixture. Bake for 30 - 40 minutes or until bubbly and topping is golden. Enjoy! Note* Sometimes I make an extra half recipe of topping.
