I love sweet potato casseroles. I don't think I've ever made them the same way twice. Happy Thanksgiving!! Enjoy!

Ingredients For ~ awesome sweet potato casserole ~

  • 2 - 29 oz
    cans, sweet potatoes, drained - or can use fresh cooked sweet potatoes ( mashed ) - i add extra sugar if using fresh. )
  • 5 Tbsp
    butter, melted
  • 1/4 c
    each - brown sugar & granulated sugar
  • 2
    eggs, beaten lightly
  • 1 1/2 tsp
    pure vanilla extract
  • 3/4 tsp
    cinnamon
  • 1/3 c
    plus 2 tablespoons - heavy cream
  • TOPPING
  • 1 c
    chopped pecans
  • 3/4 c
    packed, brown sugar
  • 1/4 c
    plus 1 tablespoon flour
  • 3 Tbsp
    melted, butter

How To Make ~ awesome sweet potato casserole ~

    Preheat oven to 325 degree F. Grease a 9 x 13 baking dish or same sized casserole dish.. In a large bowl, mash potatoes, along with - melted butter, sugars, eggs, extract, cinnamon and cream. Spread mixture into prepared dish. In a dish, combine pecans, flour, butter and brown sugar. Crumble evenly over potato mixture. Bake for 30 - 40 minutes or until bubbly and topping is golden. Enjoy! Note* Sometimes I make an extra half recipe of topping.
