This recipe was in an old magazine I had. Yummy. Pinched the photo off the web. This is a great way to use those leftover mashed potatoes.

Ingredients For au gratin potato pancakes

2 cmashed potatoes (without added milk and butter)

1egg, lightly beaten

1 Tbspminced chives
-
1 tspminced fresh parsley

3/4 tspsalt

1/8 tspdried minced garlic

1/8 tsppepper
-
1 dashdried rosemary, crushed

1/2 cshredded sharp cheddar cheese

4 Tbspcanola oil, divided
How To Make au gratin potato pancakes

1In a large bowl, combine the first 8 ingredients. Stir in cheese.

2Heat 2 Tbsp. oil in a large non-stick skillet over medium heat. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Cook in batches for 2-3 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels.
