There aren't any spices so the flavor of the amaretto is noticeable but not overpowering in this easy sweet potato casserole. We loved the pairing of amaretto with the naturally sweet potatoes. This holiday casserole is creamy and a traditional sweet potato casserole with a twist. When tasting this, if you don't know about the amaretto you can't put your figure on what's different. Marshmallows on top are the perfect touch. They're crunchy outside and gooey inside. This will be delicious alongside Thanksgiving turkey or Christmas ham.

Ingredients For amaretto sweet potatoes

  • 3 can
    sweet potatoes or yams, 29 oz each
  • 1/2 c
    light brown sugar (packed)
  • 1/4 c
    orange juice
  • 1/2 c
    amaretto liqueur
  • 1/2 c
    sugar
  • 1/2 c
    margarine, divided
  • 2 c
    large or miniature marshmallows

How To Make amaretto sweet potatoes

  • 1
    Preheat over to 350 degrees.
  • Sweet potatoes and margarine in a bowl.

    Drain canned yams or sweet potatoes. Place in large mixing bowl. Add 2 tablespoons margarine. Place in microwave for 1 minute.
  • Mashing everything together.

    Mash potatoes and margarine with potato masher.
  • Ready to whip potatoes, margarine, sugars, juice, and amaretto.

    Melt remaining margarine. With an electric mixer, whip potatoes, margarine, sugars, juice, and amaretto.
  • Sweet potatoes poured into the baking dish.

    Pour into a greased 2.5-quart casserole.
  • Sweet potato casserole baking in the oven.

    Bake for 30 minutes.
  • Topping casserole with mini-marshmallows.

    Remove from oven and top with marshmallows.
  • Browning mini-marshmallows.

    Return to oven and bake for 10 - 15 more minutes until marshmallows slightly brown and "puff."
