Ingredients For ali's potato gruyere chowder

8 slicebacon (*or substitute fake bacon for veg version)

2 Tbspolive oil, if needed

1 lgonion, chopped
-
1 lgshallot, chopped
-
2 clovegarlic, chopped
-
3 cpotatoes, any color (dice into 1/4 inch pieces)

1 tspsalt
-
1 Tbspdijon mustard
-
3 cmilk
-
1 cgruyere cheese, grated
-
another 1 tsp. salt
-
freshly ground pepper
-
fresh chives for garnish
How To Make ali's potato gruyere chowder

1In a large pot, cook the bacon according to package directions, until browned and crisp. Cool and chop into small pieces. Set aside.

2In the same pot over med-high heat, add the onions, shallot and garlic. (add a little olive oil if needed.) Saute for 5 min. or until the onions start to get soft.

3Add the diced potatoes and 1 tsp salt, saute for about 2 minutes. Add the mustard and milk. Bring to a boil, then simmer for about 25 minutes, or until potatoes are soft and soup thickens.

4Whisk in the Gruyere cheese, another tsp. of salt, and a few pinches of pepper. Garnish with the bacon and chives.
