This recipe from "Angels Homestead " by April- is so good and really very...a-peeling. Sorry about the pun! Simple too- try this on summer squash peelings too-

How To Make a-peeling snack

1Peel as many potatoes as desired or other vegetables using a vegetable peeler to get the best thin peelings. Place in salted water to prevent browning.Set aside. Cover a baking pan with parchment paper and spray with olive oil. Preheat oven to 400^.

2When ready to bake- drain and pat dry. Place the patted dry skins in a single layer on the parchment paper and drizzle with olive oil or spray with olive oil.

3Sprinkle with your favorite seasoning. Bake for 10-15 minutes until desired crispness. Let cool and enjoy! --- Sometimes I beat an egg white till soft peaks from and drench skins in the whipped whites and sprinkle with desired seasoning and bake as directed. Make them nice and crispy!
