Whenever we went to Grandma's house we had macaroni salad or potato salad. Pretty much both were made the same way, with just the different main ingredients. It never was a family dinner without one or the other. Even when she was in her wheelchair and couldn't boil everything at the stove, I brought things to her in small mixing bowls so she still got to feed her favorite comfort sides to her family.

Ingredients For tortoise's pasta salad

  • elbow macaroni, cooked
  • chopped onion
  • pickle relish
  • mayonnaise
  • hard boiled eggs
  • dill weed
  • accent

How To Make tortoise's pasta salad

    To take this into camp, I boiled the macaroni ahead of time, let it cool, then put into ziplock bags with just a touch of oil to keep the pasta from being sticky. Then added the remaining to taste in camp. See home directions for how I added everything.

    To make at home, is a different story! I make it the way Grandma used to make it. While macaroni is cooking, chop onions into a large bowl and cover with pickle relish; stir until the onions look a little green. Then chop and add the eggs; mix again. When macaroni is cooked, toss warm into the bowl with the onions, eggs and relish. Sprinkle with accent and dill weed. Take as much mayo as needed to make it stick together. Then cover it and put it into the fridge to cool completely. Before serving, you will need additional mayo, and check the taste because you may want more accent and dill weed.
